Beef Tortilla Rolls Recipe
Makes approximately 16 rolls
Ingredients
500g beef mince
1 small onion, diced
2 tbsp taco seasoning
¼ cup fresh parsley, finely chopped
4-5 large flour tortillas
1 cup mozzarella cheese
Olive oil for brushing
Method
Preheat the oven to 220°C.
Lightly brush a baking dish with olive oil.
Combine the beef mince, onion, taco seasoning and parsley in a large bowl and mix until well combined.
Place one tortilla on a clean surface and spread a thin, even layer of the beef mixture over the tortilla.
Sprinkle with mozzarella cheese.
Roll the tortilla tightly into a log and slice into approximately 2.5cm rounds.
Arrange the rounds cut-side up in the prepared baking dish.
Lightly brush the tops with olive oil.
Bake for approximately 30-35 minutes, or until the beef is completely cooked through and the tortilla rolls are golden and crispy.
Serve with your favourite dipping sauce.
