Air Fryer Cheesy Beef Lasagne Rolls

Serves: 2

Ingredients

  • 330g extra lean beef mince
  • 2 tbsp tomato paste
  • ¼ cup (60g) cottage cheese
  • 1 tsp salt
  • 1 tsp garlic powder
  • 1 tsp oregano
  • 4 low-carb tortillas
  • ½ cup (60ml) tomato passata
  • 150g low-fat shredded mozzarella
  • Extra cottage cheese for topping, optional

Method

  1. Add the beef mince to a pan with the salt, garlic powder and oregano. Add the cottage cheese and tomato paste and cook for approximately 6 minutes, or until the beef is browned and completely cooked through.
  2. Divide the beef mixture between the four tortillas.
  3. Roll each tortilla tightly and place the rolls into the air fryer basket.
  4. Spoon the tomato passata over the top. Add a few dollops of cottage cheese if desired, then sprinkle over the mozzarella.
  5. Air fry at 200°C for approximately 10 minutes, or until the cheese is melted and golden and the rolls are piping hot.
  6. Serve immediately with vegetables or salad.
